Ive made coconut loaf for as long as I can remember. I love easy and delicious. It comes from a wonderful family cookbook that was a fundraising project for the preschool of my cousins in the 80’s. Everything is great as its mum and granny tested!!
Here we go….
2 cups Coconut
2 cups Flour
2 cups Sugar
1 1/2 Milk
2 tsp Baking Powder
Greese and put in loaf tin at 180 for 1 hour.
This one I put some frozen cherries on top. They sunk in and made the loaf extra yummy.
